Ingredients:

  • 2 eggs
  • 1 1/2 cups cooked pumpkin
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup half-and-half
  • 3 tbsp sherry wine

Directions:

  1. Beat eggs slightly and combine with all other ingredients.
  2. Pour mixture into unbaked pie shell and bake for 10 minutes.
  3. Reduce temperature to 350 and continue baking 30-40 minutes until filling is well set.
