Ingredients:

Directions:

  1. To the beaten eggs add the sugar and blend well, Beat in oil
  2. Add the dry ingredients and pumpkin and mix thoroughly. Stir in walnuts by hand
  3. Pour batter into well greased and floured 9 x 13 baking pan or 2 round 9 pans.
  4. Bake at 350 for 45-60 minutes (test center with pick to be sure cake is fully baked)
  5. Frost with my butter cream icing:
  6. Cook until thick and cool completely
  7. 1 cup of milk
  8. 5 tablespoons of flour
  9. In another bowl cream 1/2 pound sweet butter(2 sticks)
  10. With 8 ounces cream cheese
  11. Add 1 cup confectioners sugar or more if needed. I dont like it sweet so adjust to your taste
  12. Add cooked pudding mix
  13. Add 2 teaspoons of vanilla
  14. Add more 10 if needed to make it light and fluffy.
  15. You can add super drained pineapple if you wish.
  16. I use this butter cream for so many things. Cream cheese is an addition for this recipe only.
