Ingredients:

  • 1 1/2 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 4 eggs
  • 1 cup sugar
  • 1/2 tsp vanilla
  • 3/4 cup oil

Directions:

  1. Preheat oven to 350.
  2. Combine flour, baking soda, baking powder and salt, set aside.
  3. Beat Eggs, sugars, and vanilla in large bowl on high speed for about 30 seconds.
  4. Add Dry ingredients and mix well.
  5. Add pumpkin and oil and mix well.
  6. Pour batter into greased loaf pan.
  7. Bake approx 70 minute or until toothpick inserted come out clean.
  8. Cool on wire rack.
