Ingredients:

  • 1 2/3 cups flour
  • 1/4 tsp baking powder
  • 3/4 tsp salt
  • 1/2 tsp cinnamon
  • 1 1/4 cups sugar
  • 1/2 cup oil
  • 1/2 cup water
  • 1 cup pumpkin
  • 2 eggs
  • 1 cup raisins
  • 1 cup chopped nuts (optional)

Directions:

  1. Heat oven to 350 degrees.
  2. Grease two coffee cans.
  3. Blend all ingredients together (I put everything in food processor) Pour equal amounts into each coffee can and bake for 1 hr and 15 min.
