Puff Pancake Ala Orange

Ingredients:

  • 3 eggs
  • 1/2 cup of pancake mix
  • 1/2 cup of milk
  • 1 tbsp of butter
  • 1 tbsp of grated orange rind (lacking fresh oranges-a drop of orange oil or a little orange extract-kid friendly version)
  • 3 oranges , segmented (as kids we used a can of mandarin )
  • 1/3 cup of firmly packed brown sugar
  • nutmeg , fresh please , grate on your microplane

Directions:

  1. With the electric mixer beat the eggs on high speed until foamy.
  2. At medium speed, add pancake mix alternately with the milk until well blended.
  3. Preheat oven to 450 degrees.
  4. Put butter in an oven-proof skillet and put in the oven and melt and heat the pan for 3 minutes.
  5. Beat the egg mixture again while the skillet is heating up.
  6. Stir in orange peel. (or extract)
  7. Pour into the skillet and bake 15 minutes.
  8. Cut oranges into bite size pieces and combine with the brown sugar.
  9. Spoon onto pancake directly from the oven.
  10. Serve directly from the pan.
  11. Top each serving with a dollop of sour cream and
  12. A light grate of nutmeg.
  13. Melt in your mouth goodness.
