Ingredients:

  • 1 cup flour
  • 1 cup milk
  • pinch of salt
  • 8 tsp(plus1/4 cup) butter,divided
  • 2 large sweet oranges
  • 1 large lemon
  • 1 cup sugar
  • 1/4 cup drambule liqueur

Directions:

  1. In bowl,place flour.
  2. Make a well in center and add eggs,stir.
  3. Gradually add milk and salt.
  4. Beat batter until smooth.
  5. Refrigerate for 2 hours.
  6. In 8 skillet melt 1 teaspoon butter.
  7. When hot,pour about 1/4 cup of batter,swirling to spread evenly.
  8. Cook until top of pancake is dry.
  9. Turn and brown other side.
  10. Turn out onto dish towel.
  11. Fold in quarters.
  12. Continue to make pancakes,adding butter to pan until batter is exhausted.
  13. To make sauce:
  14. Grate the peels of the oranges and lemon.
  15. Squeeze out the juice from each and reserve.
  16. In skillet,melt 1/4 cup butter.
  17. Add sugar and citrus juices.
  18. Bring to a boil,stir in peels and simmer for about 4 minutes.
  19. Remove from heat and add Drambule.
  20. To Serve:
  21. Preheat oven to 300 degrees.
  22. Wrap the pancakes in foil and warm in oven for 10 minutes.
  23. Warm sauce in skillet.
  24. Add folded pancakes and sliced bananas.
  25. Spoon sauce over all ,turning pancakes once,very gently.
  26. Place on individual plates and top with a scoop of vanilla ice cream.
  27. Pour sauce over all.
