Pressure Cooker Buttermilk Potato Soup

Directions:

  1. Melt butter over medium high heat. Add onion, carrot, turnip and garlic; saute until soft - approx 3 min.
  2. Add potatoes, ham, water, hot sauce, mustard, salt and pepper. Lock lid and bring to 15psi over high heat. Immediately reduce to low heat and keep pressure for 4 minutes. Remove pan from heat and use natural release to depressurize.
  3. Carefully open lid after pressure has dissipated. Stir in buttermilk and corn and simmer until soup reaches desired thickness.
