Ingredients:

  • 1 cup long grain rice
  • 1 can water
  • note: may add sliced mushrooms, water chestnuts, pimiento
  • for mexican rice
  • add a little cumin, chili powder, garlic, 1/4 cup drained petite diced tomatoes, cilantro, black olives
  • also: i have doubled it many times

Directions:

  1. Melt butter in casserole dish
  2. Add all ingredients
  3. Stir to blend
  4. Cover dish
  5. Bake at 350 degrees until liquid is absorbed
  6. Remove from oven, keeping lid on for a few minutes
