Ingredients:

Directions:

  1. In a covered saucepan cook potatoes in boiling water for 25 minutes then drain and cool.
  2. Slice potatoes into 1/2 thick slices.
  3. In a large bowl combine potatoes, artichoke hearts, bacon, parsley and olives.
  4. Mix together olive oil, vinegar, salt and pepper and add to the potato mixture then toss to coat.
  5. Arrange on a serving plate around cheese.
