Ingredients:

  • 5 lbs potatoes
  • 1/2 cup olive oil
  • 1/4 cup vinegar
  • 1 tbsp lemon juice
  • 1/4 cup parsley
  • 1 garlic clove
  • 1 tsp salt
  • 1/2 tsp pepper

Directions:

  1. Combine oil, vinegar, lemon juice, chili, onion, garlic, salt and pepper in a pot. Bring to a boil for 1 minute. Pour over potatoes and chill.
