Ingredients:

Directions:

  1. Combine 2 cups cold mashed potatoes, 1 slightly beaten egg, 1/4 cup chopped onion, and salt and pepper to taste.
  2. Mix well.
  3. Shape in 6 patties.
  4. Dip in flour, then brown slowly in butter, about 5 minutes on each side.
  5. Makes 6 servings
