Potato Leek Soup

Ingredients:

Directions:

  1. Saute leeks, onion, carrot and celery in butter in a stockpot or large saucepan.
  2. Add chicken broth, water, and potatoes and bring to boil.
  3. Simmer 15 minutes.
  4. Puree mixture in batches in blender, and return to pot.
  5. Add milk and wine and reheat.
  6. Add salt and pepper to taste.
  7. Serve topped with parsley.
