Ingredients:

Directions:

  1. Cream the butter. Mix in vanilla and mashed potatoes. Gradually mix in 2 pounds of powdered sugar. Add additional sugar (up to another pound) mixing well, until the candy is thick enough to be rolled into balls that hold their shape.
  2. Roll into 1" balls and then roll balls in cinnamon. No need to refrigerate or cover when storing. In fact, left open to the air they get a nice crunch to them and taste even better.
