Pork Tenderloin With Creamy Apple Cider Sauce

Ingredients:

  • 2 small pork tenderloin , 3/4 lb each
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp olive oil
  • 2 tbsp flour
  • 1/2 cup heavy cream
  • 1 1/2 cups couscous
  • 1/2 cup water

Directions:

  1. Heat oven to 425.
  2. Season pork with 1/2 tsp salt and 1/4 tsp pepper.
  3. Heat oil in large skillet.
  4. Brown pork loins on all sides.
  5. Remove to baking dish and bake for 12 minutes.
  6. Keep warm.
  7. Stir flour into 1 cup of broth until dissolved.
  8. Add to skillet.
  9. Add apple cider and simmer 5 minutes stirring occasionally.
  10. Stir in cream, 1/4 tsp salt and 1/4 tsp pepper.
  11. Add mustard and simmer 1 minute.
  12. Add parsley.
  13. Meanwhile, in a medium pot bring 1 cup broth, 1/2 cup water and 1/4 tsp salt to a simmer.
  14. Turn off heat.
  15. Add couscous.
  16. Cover and let stand 5 minutes.
  17. Fluff with fork.
