Pork.....pork  Fillets With Apple and Almonds

Ingredients:

  • 1 large apple
  • 1 tsp sugar
  • 1/4 tsp cinnamon
  • 1/4 tsp garlic powder
  • 1 tsp salt
  • 1/4 tsp ground pepper
  • 1/4 cup olive oil
  • 1/2 cup red wine
  • 1 cup stock

Directions:

  1. Slice tenderloin into 6 pieces.
  2. Peel,core and chop apple.
  3. Combine apple, almonds, sugar, and cinnamon; mix well.
  4. Make a horizontal slash in the center of each tenderloin with out cutting through.
  5. Stuff with apple mixture.
  6. Press meat together and secure with string or skewers.
  7. Combine garlic power,salt and pepper.
  8. Rub all over the tenderloin.
  9. Heat oil in a deep skillet, brown on all sides.
  10. Add wine and stock, bring to a boil.
  11. Reduce to a simmer for 1 hour turning meat every 15 minutes.
  12. Serve.
