Ingredients:

  • 1 medium chopped onion
  • 1/2 tsp salt (to taste)
  • 2 small cans tomato sauce or
  • 1 smll can tomato paste
  • 2 cans paste size cans water or 2 sauce size can water
  • 1 tbsp sugar
  • 1 small package frozen peas
  • 1 small jar red pimentos

Directions:

  1. Cut pork into bite size pieces
  2. Place into 4 qt dutch oven on stovetop set at medium to med/high
  3. Add garlic and chopped onion, stirring to keep from sticking
  4. When pork is browned and onion is nearly translucent add salt, pepper and bay leaves
  5. Continue stirring until well mixed
  6. Add tomato sauce/paste and stir well
  7. Add water, sugar and 1 jar or less red pimentos
  8. If pimentos aren't your thing, leave them out
  9. Simmer together 40 minutes
  10. Add frozen peas and continue to simmer for 5 minutes.
  11. Remove from heat and serve with hot steamed rice
