Ingredients:

  • 1 egg
  • 1 (10 oz) package rice-a-roni ( beef flavour)
  • 2 3/4 cups water

Directions:

  1. Mix ground beef, egg and rice from Rice A Roni pkg.
  2. Shape into meatballs (about 12- 16).
  3. Cook in frying pan with vegetable oil enough to cover bottom of pan.
  4. Place cooked porcupines in a pot big enough to hold meatballs and water.
  5. Mix seasoning packet from Rice A Roni and 2 3/4 cup of water.
  6. Pour over porcupines.
  7. Bring to a boil then cover and simmer until liquid is almost absorbed about 20 minutes.
