Ingredients:

  • 1/2 cup butter
  • 1 1/2 cups all-purpose flour , unsifted
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 3 large eggs
  • 1/2 cup sugar
  • 2 tsp vanilla

Directions:

  1. Preheat oven to 350 degrees.
  2. In the top of a double boiler over low heat, melt the semisweet chips and butter, stirring until smooth.
  3. Set aside to cool.
  4. In a small bowl combine the flour, baking soda and salt; set aside.
  5. In a large mixing bowl, beat the eggs, sugar and vanilla until light.
  6. Blend in the melted chocolate and then dry ingredients.
  7. Stir in the green mint chips and chill for 10 to 15 minutes or until stiff.
  8. Drop by well rounded teaspoonfuls onto parchment lined cookie sheets.
  9. Bake 8 to 10 minutes; cookies will be soft in center but will firm as they cool.
