Ingredients:

Directions:

  1. Combine plums and water in a non-reactive saucepan.
  2. Bring to a boil and simmer 3 minutes.
  3. Add sugar and return to simmer, stirring all the while.
  4. Remove from heat and let stand overnight.
  5. Return mixture to a simmer, stirring occaisionally.
  6. When mixture gets thick, stir constantly.
  7. Boil until the mixture reaches 225 degrees f on a candy thermometer.
  8. Remove from heat and stir in walnuts and rum.
  9. Ladle into hot sterilized jars.
  10. Wipe rims carefully and seal with 2 piece lids.
  11. Cool and store for at least 2 weeks before serving.
