Ingredients:

  • 1 tbsp sugar (for savoury bagels - for sweet increase to 3 tbsp)
  • 1 package active dry yeast
  • 3 1/3 cups flour
  • 1/2 tsp salt
  • 1 tbsp honey or maple syrup

Directions:

  1. In a large bowl (preferably of a stand mixer), combine 1/3 cup warm water, sugar and yeast. Let stand 10 minutes.
  2. In another bowl, mix together flour, gluten and salt.
  3. With the mixer on low speed, slowly begin adding in flour until it's all incorporated. The dough will be very stiff.
  4. Increase the mixer speed to medium and knead 8-10 minutes.
  5. Place in a greased bowl, cover and allow to rise 2-3 hours, until doubled.
  6. Punch down and cut into 8 even pieces. Cover and let rest 10 minutes.
  7. Shape each piece of dough into a ring and place on greased or lined baking sheets.
  8. Cover rings and place into the fridge for 12-24 hours.
  9. Remove from fridge and allow to rise 1 hour at room temperature.
  10. Preheat oven to 375F and bring a large pot of water to boil. Add sweetener to the water.
  11. When bagels have risen, add two at a time to the boiling water and cook 1 minute, flipping over after 30 seconds. Place on greased or lined baking sheets.
  12. Bake one sheet at a time for 20 minutes, cool on a wire rack.
