Directions:

  1. Place pineapple chunks and juice in an 8-inch square baking dish. Freeze 1 1/2 to 2 hours or until almost frozen.
  2. Place frozen pineapple and chopped mint in a blender or food processor; process until smooth, but not melted.
  3. Spoon 1/2 cup pineapple mixture into each of 5 dessert dishes. Garnish with mint sprigs, if desired.
