Pineapple Ice Water

Ingredients:

  • 1 large pineapple , cut in half lengthwise
  • 6 oz sugar
  • 1/4 pint water

Directions:

  1. Remove the core from the pineapple and scrape out the pulp and juice.
  2. Place in a blender or food processer and puree.
  3. Reserve the pineapple shells, cover in plastick wrap and chill in the refrigerator while preparing other ingredients.
  4. Pour pineapple puree into a small bowl, cover and keep chilled.
  5. In a medium sauce pan heat the water on low and add the sugar.
  6. Stir until dissolved.
  7. Add the pineapple puree and mix well.
  8. Transfer to a freezerproof container.
  9. Put lid on tightly and freeze for 3 hours.
  10. Whisk the egg white until stiff than gradually whick in the pinneapple ice water until frothy.
  11. Cover and freeze until firm.
  12. Transfer from the freezer to the refrigerator for 10 minutes to soften, before serving.
  13. Scoop pineapple ice back into reserved pineapple shell for serving.
