Ingredients:

Directions:

  1. Core and finely chop unpeeled pears to measure 1 1/4 cups.
  2. Combine with eggs and bran; let stand while preparing remaining ingredients.
  3. Sift flour with sugar, baking powder, salt, and soda into mixing bowl.
  4. Add shortening and pear-bran mixture
  5. Mix until well moistened.
  6. Stir in walnuts.
  7. Turn into a well greased loaf pan. (Poof, presto chango, you are a loaf pan! -Ha! -Bad joke!)
  8. Let stand 20 more minutes.
  9. Bake at 350 about one hour, or until toothpick comes out clean.
  10. Let stand 10 minutes, then turn onto wire rack to cool,
  11. Spread with lemon mint butter if desired.
  12. For mint butter: Beat 1 cup softened butter or margarine with 1 t. grated lemon peel and 2 T. chopped fresh mint leaves.
  13. Decorate top of loaf with thinly sliced fresh pears before baking if desired. ( takes about 1/2 pear)
