Pho Bo Vietnamese Beef And Rice Noodle Soup

Ingredients:

Directions:

  1. Combine the broth, ginger, lemon grass, shallots, and cinnamon stick in a stockpot.
  2. Simmer 30 minutes.
  3. Strain. Discard the solids.
  4. Add the fish sauce.
  5. Taste and add salt if necessary
  6. Partially freeze the beef to make it easier to slice.
  7. Slice the beef into paper-thin slices.
  8. Just before serving, drop the rice sticks into boiling water.
  9. Bring the water back to a boil and drain immediately.
  10. Bring the broth back to a boil.
  11. Place each garnish in a separate bowl and arrange on the dining table.
  12. Place 2 oz beef slices in the bottom of each soup bowl.
  13. Ladle 8 fl oz broth over the beef slices.
  14. The boiling broth cooks the beef in moments.
  15. Add rice noodles to the bowl.
  16. Allow guests to help themselves to garnishes to flavor soup as desired.
