Peter's Easy Gluten Free Cookies

Ingredients:

  • 1 cup chunky peanut butter (we use maranatha or earth balance...real peanut butter)
  • 1 egg
  • 1 tsp vanilla
  • 1 cup chocolate chips (original recipe says 6 oz., but 1 cup. is a good theme & easy

Directions:

  1. Preheat oven to 350 degrees.
  2. Mix everything but chips in mixing bowl.
  3. Fold in chips.
  4. Form dough by tablespoons into balls.
  5. Arrange 2 inches apart on ungreased baking sheets.
  6. Bake 10-12 minutes.
