Ingredients:

  • 1 cup flour
  • 1/4 tsp salt
  • 2 tbsp sugar
  • 1 cup milk
  • 1 egg

Directions:

  1. Mix together flour, baking powder, salt and sugar in a bowl.
  2. Melt butter in microwave or on stove.
  3. Add milk, egg and vanilla to dry mixture and mix until smooth.
  4. Add melted butter and mix until butter is incorporated.
  5. Cook on griddle.
  6. Tips: Don't overmix. You want it to be smooth, but if you mix too long, the pancakes aren't as perfect. Feel free to double the recipe. Make small pancakes or really large ones - all work well. You can add blueberries to the mixture and make blueberry pancakes. Or, they are yummy topped with warm homemade applesauce (cut up some 3 or 4 apples, put in a saucepan with 2 teaspoons of lemon juice, 2 TBS water, a generous sprinkling of sugar and a generous sprinkling of cinnamon and cook with the lid on until apples soften and can be mashed with a fork).
