Pepita Protein Energy Bars

Ingredients:

  • 10 oz pepitas
  • 2 oz almonds
  • 1/2 tsp cinnamon
  • 1/2 tsp mixed spice
  • 2 oz molasses
  • 1 oz honey

Directions:

  1. Preheat oven to 350 degrees
  2. Crush or break almonds into big chunks.
  3. Mix all dry ingredients together. Spread out onto a baking tray and toast in the oven for about 5 minutes.
  4. Chop the cranberries and stir them inches.
  5. Place the dry ingredients into a large bowl and pour in molasses and honey over.
  6. Mix through until well combined then spread into a line baking dish, pressing down firmly.
  7. Bake for about 20-25mins or until golden brown.
  8. Allow to cool then cut into squares.
  9. Store in the fridge.
