Ingredients:

Directions:

  1. In a large pot of boiling salted water, cook the penne until al dente, about 8-10 minutes, stir occasionally.
  2. Meanwhile, heat 1 tablespoon oil in a large skillet over medium heat.
  3. Add in the garlic, spinach, salt to taste, and red pepper flakes; cook until the spinach is tender, about 2-4 minutes.
  4. Add in raisins and pine nuts; keep warm over low heat.
  5. When the pasta is cooked, drain it and transfer to a large serving bowl.
  6. Add in the spinach mixture and remaining oil; toss; adjust seasoning to taste; serve.
