Penne in Cream Sauce with Sausage

Ingredients:

Directions:

  1. Melt butter with oil in heavy large skillet over medium-high heat.
  2. Add sausage, onion and garic and saute until golden brown and tender, about 7 minutes.
  3. Drain any excess dripping from skillet.
  4. Add wine to skillet and boil until almost all liquid evaporates, about 2 minutes.
  5. Add tomatoes with juices and simmer 3 minutes.
  6. Add cream and simmer until sauce thickens slightly, about 5 minutes.
  7. Stir in 4 tablespoons parsley.
  8. Season to taste with salt and pepper.
  9. Remove from heat.
  10. Cook pasta in large pot of boiling, salted water until firm to bite.
  11. Drain; transfer to large bowl.
  12. Bring sauce to simmer.
  13. Pour sauce over pasta.
  14. Add 3/4 cup cheese and toss to coat.
  15. Sprinkle remaining 1/4 cup cheese and 2 tablespoons parsley.
