Ingredients:

  • 1 cup sugar
  • 1 cup firmly packed dark brown sugar
  • 1 large egg
  • 1 tbsp vanilla
  • 3 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 cups finely chopped pecans

Directions:

  1. Cream butter.
  2. Gradually add sugar, beating well.
  3. Add egg and vanilla and blend well.
  4. Combine dry ingredients except pecans and gradually add to creamed mixture, beating well after each addition.
  5. Stir in pecans.
  6. Divide dough in half and shape each half into a 1 1/2 diameter log.
  7. Wrap in plastic wrap and chill 3 hours or until firm.
  8. Cut dough into 1/4 thick slices.
  9. Place 2 apart on lightly greased cookie sheet.
  10. Bake for 12 minutes or until lightly browned at 350°.
  11. Cool on wire racks.
  12. Can be stored in airtight container for several weeks.
