Ingredients:

  • 2/3 cup firmly packed brown sugar
  • 1/2 cup peanut butter
  • 2 tsp vanilla
  • 1 egg
  • 1 3/4 cups plain flour

Directions:

  1. Preheat oven to 180C Beat the butter and sugar until light and creamy.
  2. Beat in the peanut butter, vanilla and egg until well combined.
  3. Transfer the mixture to a large bowl.
  4. Sift in the flour and add the peanuts.
  5. Using a large metal spoon, stir until well combined.
  6. Place tablespoons of mixture onto baking trays, allowing room for spreading.
  7. Bake for 15 minutes or until golden.
  8. Leave the biscuits on the trays for at least 2 minutes before transferring them to a cooling rack.
