Peanut Butter Fudge (like mom Ruthe's)

Ingredients:

  • 5 oz (small can) evaporated milk
  • 2 1/4 cup brown sugar
  • 1/2 cup butter
  • 1 tsp vanilla

Directions:

  1. Line 8x8 or 9x9 pan with plactic wrap.
  2. Melt butter over medium heat, add brown sugar and milk. Bring to rolling boil and continue to cook for 2 minutes, stirring constantly. Remove from heat, add peanut butter and vanilla. Stir until peanut butter has melted, then pour over powdered sugar in large mixing bowl of electric mixer or use hand mixer to beat until smooth. Pour into pan and spread out with back of spoon. Chill until firm and cut into squares.
