Ingredients:

  • 1/4 cup margarine
  • 1/2 tsp splenda
  • 2 eggs
  • 2 cups all-purpose flour , sifted
  • 1 tsp cinnamon
  • 8 oz peanuts , salted

Directions:

  1. Cream margarine. Add sugar substitute, eggs and lemon rind. Mix
  2. Well. Add flour and cinnamon. Mix well. Add peanuts and stir.
  3. Shape into bars 1-inch x 1-1/2-inch x 1-inch thick. Pat
  4. Firmly. Cover with waxed paper and allow to dry overnight.
  5. Heat oven to 375 degrees F. Bake the bars
  6. 12 to 15 minutes. Let cool.
