Ingredients:

  • 1/2 cup sugar
  • 1 tsp cinnamon
  • 1/4 tsp vanilla
  • 2 tbsp. flour (for juicy peaches;
  • topping
  • 1 stick cold butter
  • 1 cup flour
  • 2/3 cup sugar
  • 1 tsp cinnamon

Directions:

  1. Preheat oven to 350. Grease the bottom only of an 8x8 glass baking dish. Peel and pit peaches,slice and place in a large bowl.
  2. Top with sugar,flour,cinnamon and vanilla,toss to coat.Set aside while preparing topping.
  3. Make streusel by cutting butter into a bowl(make sure butter is cold),adding flour,sugar and cinnamon,and rubbing it through your fingers till the streusel is a coarse sandy/pebbly texture. Put seasoned peaches into the pan,top generously with the streusel and bake at 350 for 30 minutes,until the streusel is golden brown and peach juice is starting to bubble up through the topping.
