  1. In a large skillet over medium-high heat, melt butter. Add celery, onion, carrot, and green pepper; saute until carrot is tender; about 8 minutes.
  2. Add apple and mushrooms; saute 2 minutes longer.
  3. Add rice from mix; toss to combine.
  4. Stir in seasoning from rice mix.
  5. In glass measure, combine chicken broth with enough water to make 2 cups; stir into rice mixture.
  6. Bring to boiling; cover. Simmer until broth is absorbed, about 10 minutes.
  7. Add almonds; toss to combine.
  8. Serve immediately
