Directions:

  1. First you want to heat some olive oil in a pan over medium flame.
  2. Saute onion and cook apprix. 2 to 3 minutes.
  3. Then you can add in the garlic, potatoes and carrot, cook approx. 1 minute. Next you want to add in the tomatoes, water and rotini.
  4. Let this come to a a boil over medium-high heat and cook 5 minutes.
  5. Now you want to add sausage and zucchini.
  6. You want to let this continue to cook approx. 5-8 minutes or until pasta and vegetables are tender and soup is thickened.
  7. Serve each bowl with shredded parmesan cheese..
