Ingredients:

Directions:

  1. Pre-heat the oven to 180 degrees (fan oven).
  2. Scrunch foil around the base and sides of 4 10cm metal cooking rings to seal.
  3. Grease well.
  4. Divide the biscuit crumbs between the rings.
  5. Blend ricotta and soft cheeses, eggs cornflour, sugar lime rind and juice in a food processor until smooth.
  6. Spoon into the rings.
  7. Bake for 20 minutes until just set in the centre.
  8. Leave cheesecakes to cool in turned-off oven with door ajar.
  9. Top with coulis and passion fruit and serve.
