  1. Brown pork in fat. Add onion and garlic- stir until golden brown. Mix in chili, cayenne, oregano, and salt. Add enough water to cover the pork. Mix in hominy. Bring to a boil. Reduce heat, cover partially and simmer until tender-2 hours on stove top.
