Ingredients:

  • 2 1/2 cups sifted cake flour
  • 1 tsp table salt
  • 1 2/3 cups white sugar
  • 1 1/4 cups milk, divided
  • 2/3 cup shortening
  • 1 tsp vanilla

Directions:

  1. Preheat oven to 360°F Grease 2 deep 9 cake pans with shortening (at least 1 1/2 deep). Sift cake flour before measuring.
  2. Beat together cake flour, salt, sugar, 3/4 c milk and shortening for 2 minutes on medium speed.
  3. Add baking powder, egg whites, 1/2 c milk and vanilla. Beat another 2 minutes on medium.
  4. Divide batter between prepared cake pans. Bake 30 minutes or until a toothpick inserted in center of cake comes out clean.
  5. Cool in pan 10 minutes, then turn out onto cooling rack until fully cooled. Fill and frost with your favorite frosting.
