Parsnip, Carrot, Leek and Ginger Soup

Ingredients:

Directions:

  1. In a pot, cook leeks and ginger until softened.
  2. Add parsnips and carrots. Cook 7-8 minutes until they start to get soft.
  3. Pour in broth and wine. Bring to a boil, lower heat and simmer for about 20-30 minutes until the vegetables are soft/tender.
  4. Remove from heat and place in blender. Blend until smooth. Serve!
