Ingredients:

Directions:

  1. Pre-heat the oven to 350-degrees F.
  2. Boil 2 cups of water and add the butter, nutmeg and salt.
  3. As the butter is melting, lower the heat and add the flour.
  4. Stir well to incorporate until it forms a ball.
  5. Remove from the heat entirely.
  6. Let the mixture cool a bit.
  7. Add the eggs, one at a time, stirring each one in thoroughly before adding the next one.
  8. Stir in the cheese.
  9. Knead the dough until it is smooth and elastic.
  10. Divide the dough into walnut-sized bits and roll those bits in your hands into balls.
  11. Lay the dough balls on a parchment-lined baking sheet.
  12. Bake for 20 minutes, or until they are puffy, and lightly golden.
  13. This recipe make 36 puffs (3 dozen).
