Ingredients:

Directions:

  1. In a bowl combine mayonnaise, maple surup, seasoned rice vinegar, fine sea salt and white pepper. Wisk dressing until smooth and chill.
  2. Wash, cut celery on the bias, add raisins, place in a bow, add raisins toss and set salad aside.
  3. Cut lemon into quaters and place into a bowl of water.
  4. Peel, core and medium dice apples. Peel, core and medium dice pears. Place apples and pears into lemon water.
  5. Heat a small saute pan add 1 tablespoon butter, coconut and toast coconut until golden brown. Add remaining butter and toast Macadmia nuts. Add toasted coconut and nuts to salad bowl.
  6. Drain water from apples and pear. Dice apples, pears, add to salad bowl and toss the salad. Fold in salad dressing and chill salad for 30 minutes.
  7. GARNISH: Place salad on a chilled salad plate and sprinkle with Fresh Chopped Cilantro.
