Pacific Rim's Waldorf Salad

Ingredients:

Directions:

  1. In a bowl combine mayonnaise, vanilla yogurt, maple syrup, seasoned rice vinegar, sea salt and white pepper. Wisk dressing until smooth and chill for 15 minutes.
  2. Slice celery very thin, cut grapes in half and place in a bowl. Add raisians and toss well.
  3. Cut lemon into quaters and place into a large bowl of water. Peel, core, small dice apples and pear. Place apples and pear in lemon water.
  4. In a small saute pan melt 1 tablespoon of unsalted butter. Add coconut and toast until it is light brown. Remove coconut form pan and set aside. Add remaining butter, saute almonds until golden brown. Place almounds and coconut in a bowl.
  5. In a large bowl combine celery, raisins, grapes, apples, pear, coconut and almounds. Fold in dressing, season with salt and pepper to taste. Cover salad with plastic and chill salad for 30 minutes.
  6. Chop cilantro and place in a small bowl.
  7. Assembe salad.
  8. Cover bottom of chilled salad plate with red leaf lettuce. Place salad over lettuce and add the garnish. Repeat this for the remaining salads.
  9. Garnish salads with fresh chopped cilantro.
