Ingredients:

  1. Bring one 8 ounce package light cream cheese (rectangular, not the tub) to room temperature. In a large bowl, mash the cheese with a fork. Add one teaspoon garlic (from a jar), one heaping tablespoon light mayonnaise, one heaping tablespoon light sour cream, several dashes of Worcestershire sauce, a few shots of Tabasco sauce, a few shakes of mustard powder and a smidge of curry powder to the cheese and mix thoroughly.
  2. Place a piece of waxed paper on a dinner plate or baking sheet and scoop the mixture on to it. Flatten the mixture into a rectangular shape the thickness of your index finger.
  3. Place the plate in the fridge for an hour.
  4. Using the same cheese bowl as in the previous step (not cleaned out) mash a can of drained smoked oysters until well mashed. Spread the oyster mash evenly onto the cold cheese rectangle. Carefully roll it into the shape of a log encasing the oysters. Place the log seam side down onto a serving dish. Decorate the log with fresh coarsely torn parsley that is pressed into the surface of the log or you could use chopped nuts if you prefer. Chill for an hour before serving.
  5. Serve well chilled with your favourite crackers and a glass of good red wine!
