Ingredients:

Directions:

  1. Preheat oven to 375°F.
  2. In a large bowl mash sweet potatoes, add orange juice, orange zest, brandy, salt, ginger, pepper, tbsp of butter and egg.
  3. Beat with mixer, then spoon potatoes into pie plate, or 10-inch quiche pan.
  4. In a small sauce pan add 3 tbsp butter, brown sugar, cinnamon. Cook stirring frequently. Spread on potatoes and sprinkle with pecans.
  5. Can be refrigerated overnight. Do not put pecans on if you do this.
  6. Bake covered for 15 minutes and uncovered for 15 minutes.
