Orange Honey Acorn Squash

Ingredients:

  • 4 acorn aquash
  • 2 tsp salt
  • 1/2 cup honey
  • 2 large oranges

Directions:

  1. Preheat over to 400F.
  2. Cut each squash in half, remove and discard seeds and membranes.
  3. Place squash halves, cut sides up, in 2 13x9x2 inch baking pans. Add hot water to pansto depth of 1 inch
  4. Sprinkle squash halves evenly with salt and pumpkin pie spice.
  5. Stir together butter and honey and spoon evenly into squash centers
  6. Peel oranges, cut into segments, removing seeds. Coarsly chop segments, keeping juices
  7. Spoon segments and any juices evenly into squash centers
  8. Cover, bake 50 - 60 mins or until squash halves are tender
