Orange-Ginger Sweet Potatoes

Ingredients:

  • 10 large sweet potatoes (approx . 5 lbs)
  • 3/4 cup butter
  • 1/3 cup dark brown sugar (packed)
  • 1/4 cup honey
  • 1 1/2 tsp salt
  • 1/4 cup dark rum (optional)

Directions:

  1. Preheat oven to 375F.
  2. Bake potatoes on a cookie sheet until soft (approx. 1.5 hrs).
  3. When cool enough to handle, peel and chunk potatoes into a large bowl.
  4. Add butter and other ingredients and toss to mix.
  5. Mash potatoes thoroughly or puree in a blender. A hand mixer works well also.
  6. Lower oven temperature to 350F.
  7. Turn mashed potatoes into a casserole dish and dot the top with a bit of additional butter.
  8. Bake 30-40 minutes until hot.
  9. NOTE: This can be made ahead of time. Bring the mashed potato mixture to room temperature before dotting with butter and baking until hot.
