Ingredients:

  1. For the cake, preheat oven to 350 degrees.
  2. Spray two 8 cake pans with vegetable oil spray, line pans with parchment paper or wax paper, and spray paper with vegetable oil spray.
  3. Heat water in microwave on full power for one minute.
  4. Add gelatin to hot water and stir until dissolved.
  5. Refrigerate for 10 minutes. In a large mixing bowl using an electric mixer, combine cake mix, cooled gelatin, eggs, and applesauce.
  6. Mix on low for 30 seconds and then beat on medium speed for two minutes.
  7. Pour batter into prepared pans.
  8. Bake at 350 for 30-35 minutes or until cake tester comes out clean.
  9. Cool cakes in pans for 15 minutes, remove cakes from pans, and cool completely on rack.

  11. To make filling, cream together cream cheese and sugar.
  12. Add pineapple, orange juice, and pudding mix; mix on low speed.
  13. Fold in whipped topping until well blended.
  14. Use mixture as a filling between layers and as icing on top and sides of cake. Refrigerate cake before serving.
