Old Tyme Cod And Potato Chowda

Ingredients:

Directions:

  1. In a suitable soup pot, cook the salt pork until lightly brown.
  2. Stir in the onion, garlic, bay leaf, thyme, parsley stems, and saffron.
  3. Cook over low heat for 5 minutes.
  4. Add the potatoes and fish stock.
  5. Season with salt and pepper.
  6. Bring to a boil and simmer for 30 minutes.
  7. A few minutes before serving, cut cod into cubes and add to soup. Simmer for 5 minutes.
  8. Add milk and parsley.
  9. Heat before serving.
  10. Serve with oyster crackers!
