Old-Time Whole Wheat Bread

Ingredients:

  • 5 cups flour
  • 2 (1/4 oz) packages dry yeast
  • 2 3/4 cups water
  • 1/2 cup brown sugar
  • 1/4 cup shortening
  • 1 tbsp salt

Directions:

  1. Mix 3 1/2 cup flour and yeast.
  2. Heat water, brown sugar, shortening, and salt until warm (115-120 degrees) stirring to melt shortening.
  3. Add to dry mix in bowl.
  4. Beat 1/2 minute on low; 3 minutes on high.
  5. Stir in whole wheat flour and enough other flour to make moderately stiff dough.
  6. Knead until smooth and elastic (10-12 minutes) Place in large greased bowl, turn.
  7. Cover, let rise until double (1 hour).
  8. Punch down, divide in 1/2, cover; let rest 10 minutes.
  9. Shape into loaves and place in 2 greased 9x5 loaf pans.
  10. Cover, let rise until double (45 minutes).
  11. Bake at 375 degrees for 40-45 minutes.
